.........I am neither a writer nor a poet so don't know how to write.
hmmmm.......... ok . As my husband got transfered i have to leave my job and have to shift away from my sweet home, my place, my relatives and my friends but I took my mother with me at one condition that I will do all the cooking but she has to take care my one year old daughter Shreddha who is very naughty.

Thus I started my experiments on cooking by going through lots of recipes which were published in the net and also discussed the recipes with one of my friend whose most of the things are similar to mine including our name. She once discussed with me of starting a blog and I also thought of starting one.

Boondi Ladoo

Before coming to Secundrabad I was living in my sweet home at Kalady in Trivandrum. When I was about 5yrs of age there were about 15 to 20 houses in that residential area and among that houses about 5 or 6 ladies were working and all others were housewives After finishing their jobs they all will use to come to our house to have chat with my mother.


Once when we were planning to go to my parents hometown and my mother was going to buy some sweets then our neighbours told her why to buy something instead of that make some thing and give. 


They all told her that they will help her in making some sweet and then they all decided to make Boondi Ladoo.


It was such a fun all came to our house and with 1 kg of basan they made about 150 ladoos.And it was just a starting then when were we went to my parents home town they all helped my mother in making halwa, cocunut burfi,maa-laadoo etc


Good old memories now some of them are there in Kalady and some are not around us. May their soul rest in piece.






Ingredients


For Batter
Basan Powder with out lumbs    -           1 cup
Water                          -           1/2 cup


For Sugar Syrup
Sugar                          -           1(1/2) cup
Water                          -           1/4  cup
Kesar Powder                   -           a pinch
Cardamom Powder                -           1/4 tsp
Cashews/Almonds                -           1tbsp


And most important thing is to have a sieve with round holes




Method of preparation


First prepare the batter and the consistency is that it should be drippy through the sieve with round holes


Take pan and make the sugar syrup by adding sugar,water,kesar,cardamom and boil till the consistency reaches more than 1/2 thread.


Now heat the oil in a pan and 1(1/2) inches of oil should be there now pour the some of the batter in the sieve and tap it with spoon so that the batter starts dropping through the whole.Drop enough boondi's to cover the oil and when it starts light brown in colour but not crispy then take them out and put it in sugar syrup and mix it well. Now repeat the same thing with the balance batter.After all the boondi's are mixed and there is extra syrup just drain off.


After the whole batter is finished and it starts cooling or we can say it can be handled make lemon sized balls out of it.But remember we can make balls only when it is warm so don't allow it to cool.

Chicken Fry

During my school and college days when ever my father bought chicken I used to have a fight with my mother for chicken fry and she used to tell me it’s not good for health to have fried one's and then at last she will agree to fry 4 pieces and all other pieces will be used for making curry.

I know in your house also kids will be interested to have fried ones. Right? So here comes the recipe for chicken fry







Ingredients


Chciken pieces                       -              4
Lime juice                                -              1 tbsp
Oil                                               -              for frying


Marinade


Ginger - garlic paste           -              2 - 3tbsp
Red chilly powder                -              2 tbsp
Turmeric powder                 -              1/2 tsp
Coriander powder                -             1(1/4) tbsp
Garam Masala                      -              1/2 tsp
Chicken Masala                    -              1 tbsp 
Lime juice                                -              1 - 1(1/2)tbsp
Salt                                             -              to taste


Method of preparation


First clean the chicken pieces well, then put it in a bowl of water and add 1 tbsp of lime juice in it. Keep it aside for 5-10 minutes. This will help the chicken pieces to become soft.


Make 2 or 3 slits in each pieces so that the masala gets inside


Now take another bowl and mix all the ingredients to marinade and after mixing it you may taste it and add if anything is needed



Rub the masala on chicken pieces and keep it in refrigerator for at least  2 - 4 hrs .After that take a non stick frying pan and add oil in it. When oil starts heating reduce the flame to medium and add the chicken pieces into it. When it turns brown in color change the side. But note that the pan shouldn't be crowded.


You may serve it with sliced onion

Pan Cake

A very simple recipe - Pan Cake. It’s not only very easy to make but also very nutritious and kids will love it.


Ingredients
----------------
Maida - 2 cups
Eggs - 3
Powdered Sugar - 3-4 tbsp
Vanilla Essence - 1 tbsp
Baking Powder - 1 tsp
Kesar Powder (Optional) - a pinch
Jam/ Honey - as per requirement

Method of preparation
----------------------------

Take a bowl and mix all the ingredients well and kesar powder is optional because if you need the actual color don't put but kids will be attracted to see colored one's so I had added kesar powder.

After mixing it well just grind it in mixer. Then take a pan and heat it well and then pour 1(1/2) to 2 tbsp of mixture into the pan and spread it to a circle of diameter 6 cm. When one side is cooked revert it for cooking the other side


Now you may spread honey or jam over the pan cake and serve it

Boli


One day when my husband went to office I was sitting and having a chat with my mom regarding her childhood days which we usually do when we are bored and I love it.

On that day she was sharing the memories of her eldest sister's marriage which was held in front of her house at Manavalakurichi about 46 years back and all the dishes were prepared at home. Among those dishes the boli was also there. My mother told me that she had tried it once but failed and she recollected what all things the catering people did.

After collecting the details from my mother I searched internet and after that I thought on this Vishu I will make an attempt to prepare Boli. Since we are new to Secunderabad we don't know whether we will get boli here so I thought for Vishu feast I will make it myself and will serve along with palpayasam.

And believe me it was a fantastic experience and I was successful in making the delicious dessert Boli


Ingredients


---------------


Bengal Gram - 1 cup

Sugar - 1 cup

Ginger Oil - 1/4 cup

Yellow Kesar powder - a pinch

Cardamom - 1/4 tsp

Nutmeg - 1/4 tsp

Maida - 1 cup

Water - Required for making the dough

Salt - a pinch

Rice Flour - Required for spreading the dough

Ghee - 1/4 cup


Method of Preparation

First we can prepare the dough and for that

Mix the maida, salt and a pinch of kesar well. Then add water little by little so that we can make dough little bit softer than that of the dough for chapatti. Then pour the ginger oil on it in such a manner that the dough should be immersed completely in the oil. And keep it aside for at least half an hour but I kept it for 3 to 4 hrs so that the dough become smooth.

Now we can cook the Bengal gram by adding the water. Cook it well until it becomes soft and then drain the water completely. And when the maida dough will be ready take a kadai and mix the well cooked Bengal gram with sugar and stir it continuously and when the sugar melts put a pinch of kesar, cardamom and nutmeg and again stir it continuously till it becomes semi solid i.e., it must separate from the kadai.

Then grind it in the mixer and the consistency should be of chapatti dough. Then make lemon sized balls out of it.

After that take little bit of the flour dough immersed in oil, we can say half the quantity of the bengal gram mixture then spread the flour dough and place the lemon sized gram ball in it and cover it completely with flour dough, as it was immersed in ginger oil it will be very smooth and will be easy to spread it over the gram ball

After covering the gram balls with flour dough press it and spread by applying rice flour then place a pan and cook it as we do for chapatti by applying ghee on the second side and then fold it and take it.

Tips: - When we put the chapatti's on the pan within seconds we can see small bubbles coming up then turn it and similarly the bubbles will come in the second side then spray ghee over it then fold it and take it Otherwise the boli will be too hard.

Maa Ladoo -- This is specially meant for the starters in the area of cooking


Actually when I was in college my amma used to scold me a lot for not getting into the kitchen and it continued for many years but at that time also I used to help her in making Maa Ladoo. The secret behind that was I loved eating Maa Ladoo when it is hot.

And this is the first sweet I had made. And would like to share this with all the starters in the area of cooking.


Ingredients
---------------

Roasted Gram - 1 cup

Sugar - 1 cup( you can add more as per your requirement)

Ghee - 2 cups


Method of Preparation
----------------------------


Take 1 cup of roasted gram and finely powder it and also powder 1 cup of sugar. Then mix it well.

Take a pan and add ghee into it and let it melt completely then pour the melted ghee to the mixture till you get the consistency of making the lemon sized balls

Note:- You can make the lemon sized balls when it is little bit hot if it cools down then you won't be able to make it. So you may do one more thing instead of mixing the ghee in the entire mixture you may take half of the mixture and add the melted ghee as per the requirment and after making the balls out of that mixture you may repeat the same with the 2nd half of the mixture

Now go fast and make it and inform me how it is. And remember don't burn your hands by touching the mixture suddenly after pouring the ghee you may wait little bit but don't wait till it cools down
